In the spring semester of 2018, I (CMS) was assigned to teach an undergraduate ‘service learning’ course in Community Health at Appalachian State University (App State), located in the rural town of Boone, North Carolina. Service-learning courses require that students complete a project that benefits the community, while also achieving the course’s learning objectives. 1 The literature suggests that students experience several benefits from service learning, which include learning course content through practical experience, and enhanced civic engagement and social responsibility.1
